Source Top Quality Ingredients
Although a good chef can improvise his way around a kitchen, in Neil Perry’s words, “If you don’t start with the best meat you’re never going to get there.” This means buying high quality cuts, ideally with no growth hormones or antibiotic feed supplements. If you want to use the exact meat Neil does, you’ll need to get your hands on some 36 month dry aged Cape Grim grass fed beef.
Don’t Shy Away From Salt
Make sure you get a few work outs done before inhaling a top-quality steak, because according to Neil, seasoning is crucial.
“The difference between a home cook and a professional cook is how much salt you put on.”
Cook It Over Charcoal Or Natural Wood
He also recommends you grill your steak over a natural fuel like charcoal or wood, on a high heat, for about 8 minutes (depending on the thickness), flipping it regularly.
Aim For Crust & Colour
How can you tell a steak has been professionally cooked? Crust and colour on the outside, tender in the middle. So make sure the grill is sizzlin’ hot, and don’t cook it for too long.
Give It Time To Rest
Although dry-aged cuts don’t require as much resting time as wetter pieces of meat (that most of us would be likely to buy), they still need 5 minutes or so to allow the blood to infuse the meat with flavour rather than spill all over the plate.
“If you take it straight off the fire and cut it you end up with a pool of blood.”
And this should be extended for other cuts, with Neil recommending 10-15 minutes for a fresher piece that’s not dry aged.
Add Salt, Olive Oil & Lemon
Once your meat is off the grill, sprinkle a bit more salt onto it, lightly drizzle it with olive oil, and squeeze a bit of lemon onto it, Spanish style, for good measure.

There’s no doubting though that ironman athletes are some of the fittest people on Earth even though they might not look like it against the average gym junkie. Think of their competition as a combination of surf, endurance racing and strength training in a military drill style drill. Their physique as a result is more athletically lean than bulky.
Matt Poole is one of these champion ironman athletes who once ran 2 kilometres with a broken fibular to make the finish line. And today we’re getting him to teach cruisy civilians like you and I how to get the strength and stamina of an ironman.

Establish Your Goal Before You Train

People always say “you train so much, Matty,” but my goal is to be fit by summer when our races are on. I know when I need to be fit by and which races I need to do. That’s me as a pro athlete.
For the average worker, if you’re just turning up to the gym to train with no light at the end of the tunnel, that’s the definition of crazy to me.
I couldn’t do that. I couldn’t turn up to train if I didn’t have anything to race for. So I love telling people and encouraging them to find something they love to do. Whether it’s running the City to Surf, a cross fit comp, an ocean swim…whatever it is, just do it. You don’t even have to break records.
If the event is sixteen weeks away, break down your training so that you know why you’re turning up to the gym, the pool or the running track everyday before then.
Our winter training program is boring as shit. It’s just weeks on weeks of training but the reason why we do it is because it’s a building block – think of it as money in the bank every week so when summer comes you can spend that investment.
There’s a goal at the end of it and that makes training more manageable and that’s exactly what we do as ironmen.
Train Like An Ironman
The ironman competition is iconic in Australia. There are the three water disciplines:
- Swimming leg
- Board leg
- Surf ski leg
We also have soft sand running transitions which are quite brutal and exhausting. You’ll know if you’ve ever tried running on soft sand.
Our training week is big and it consists of lots of volume and kilometres to cover. This is so we can stay on point for every discipline.
The average weekly program involves:
- 4 -5 morning swim sessions a week at a distance of 4km – 6km each depending on season
- 3 – 4 sessions of daytime running a week with varying distances that focus on short sharp sprints as well as general aerobic runs (20mins – 30mins each session)
- Monday to Friday afternoon board or ski sessions
- 2 gym sessions a week specifically focusing on core strength
- Wednesday and Saturday morning are the biggest key sessions known as ironman simulations
- Total of 15 – 17 training sessions a week
- Sunday is the only rest day
Notes on gym sessions: These aren’t your usual run of the mill gym sessions consisting of bench presses an bicep curls. Poole runs a custom program which helps him build core strength whilst preventing injury and honing his swim technique.
In the gym it’s specific movements to my sport. I’m working with a strength and conditioning coach. There’s no benefit to bench pressing as my muscles and body is already so exhausted from the training workload. To hop on a bench press will set me back and can potentially cause an injury.
Poole instead focuses on these areas in the gym:
- Co-ordination
- Balance
- Mobility
- Flexibility
- Any movements that simulate the swimming, ski paddling or board motion
These specific exercises bring advantages such as:
- Strengthened supporting muscles
- Strong lower back, strong hip flexors
Because you’re in such an unorthodox position on the board or ski, it’s important to make sure you have good mobility alongside strength and flexibility through those major muscles.
Recover Like An Ironman
The old school training days of get in and go hard till you drop is so outdated. It’s madness and so detrimental.
I’m 30-years-old now and the athlete I was and how I used to train as an 18-22 year old was relentless. I could get the workload and volume in at high intensity for every session – which was way more than what I can do now.
As you get older though you need to focus on recovery sessions to make sure you’re getting the most out of them.
I’ve had to work on keeping my body injury-free or as best as possible at that workload. It’s impossible to feel 100-percent and there’s always small niggling injuries. I’ve had a bunch of surgeries so there’s no one stop shop for everyone’s training program. Prevention is the key.
Matt Poole’s advice on how to avoid injuries:
- Choose quality sessions over quantity to maximise your results
- Implement recovery sessions into your training and moderate accordingly depending on how you’re feeling
- Ensure your body is always 100-percent ready for your quality sessions
- Take it easy on the normal sessions around your quality sessions – you can go harder if you want to, but be smart with the training plan and remember your priority on quality
- Don’t work one muscle group or do the same exercise repetitively, you will get muscle soreness which will alter the dynamics or mechanics of your body
- Don’t do the same type of cardio repetitively – if you went to the gym and ran an hour every single day, you’re guaranteed to do your achilles, calves or hips and things like that will start to twist or tighten or shorten
- The biggest failure of most athletes is that they don’t like going easy or missing sessions – listen to your body when it’s screaming for rest or recovery
- Try massages, physio or chiropractic treatments weekly if you’re training seriously – do it even if you’re not sore and think of it as maintenance rather than treatment
Overcoming Pain Barriers

I’ve done races with a chest infection where I collapsed at the finish line. I completed an 8km run where I actually broke my fibular 6km into the run. I ran for the remaining 2km with a broken fibular and then finished at the line and got flown back to get my leg put in a cast.
Conditioning is the way to train your body to push through any pain threshold. If you don’t train to push through that pain barrier, you can’t replicate that in the race.
The secret is self belief and confidence. When the competition gets tough you have to be willing to hurt yourself more than anyone else in the race to reach the top. In our sport you grind people into the ground – it’s a game of survival with the last man standing.
When you give up on something, it’s a sign of weakness and that’s something you can always coach and always train.

Richard Branson and his motley crew are currently awash with creativity, and impulsive party goers should think carefully before booking a trip on his debut vessel.
Why’s this? Well in 2020, when Virgin Voyages launch their first cruise ship, the Scarlet Lady, the industry’s first seaworthy tattoo parlour will stand proudly aboard.
Now, cruise ships are known for two things: retirees ‘investing’ their inheritance in a sun tan, and groups of young people drinking daiquiris by day and making bad decisions by night. But getting inked has never been an option.
Now though, Tom McAlpin—Virgin Voyage’s president and CEO—has said it’s time to embrace the “time-honored seafaring tradition” of tattooing, with a parlour called, “Squid Ink.”
At Squid Ink, you can get a tattoo with “world famous” vegan ink or a piercing from one of two resident artists selected by the stamp master himself, Lou Rubino Jr. Not only that, but as reported by The Points Guy, “A rotating roster of legendary guest artists including Sarah Miller and Arlo DiCristina will also be on deck to deliver fresh ink.”
“Our sailors are looking to make lifelong memories… and we think there’s no better way to commemorate their first voyage with us than with a souvenir they’ll never lose track of,” (McAlpin).
And tattoos aren’t the only way Virgin is trying to revamp the cruise industry: they also brought in new blood to work on the ship’s architecture, working with luxury hotel titans, nightclub designers, restaurant owners and film set gurus to make the vessel as attractive as possible to cool young customers.
Another point of difference is that families won’t be able to book, as this cruise ship will be exclusive to people 18 and up.

Since hemp became legal in Australia on November 12, 2017, two Aussies and an Irishman have been turning the non psychoactive parts of the plant into useful products—chief among them, a relaxing gin that will invoke euphoria, but won’t get you high.

As for the gin, “It took quite a few goes to get to a good product,” Sheehan told the SBS in an interview. “As we started adding in botanicals, we began to uncover a gin which was great, but not… award-winning. That wasn’t good enough – from day one we didn’t want novelty gin. It had to stand on its own two feet as a gin, regardless of the cannabis element.
“The real breakthrough came when we started adding terpenes to the distillation process.”
The key to the gin’s success lies in terpenes—essential oils found in many types of medicinal plants and flowers—the “essence” of a plant. And Cannabis Co.’s innovative new spirit, the “Myrcene Hemp Gin” pays tribute to Myrcene, the most abundant terpene found in cannabis.

“A common practice in tropical British colonies was to soften quinine’s bitter flavour by adding gin,” the press release continues. “Australia today has thankfully outgrown many of its more negative colonial echoes, but it still retains one old habit which has now gone global: taking the edge off the mozzies with a cool gin & tonic.”

If you thought feculence was a bunch of dead cells, think again: your poo is actually teeming with microbes. And whether you’re into kale-smoothies and kombucha or white baps and whisky, it’s in your best interest to know what is in your faeces.
Luckily there’s no need to take a ‘hands on’ approach, because a bunch of poor bastards scientists have done it for you. Here’s what they say makes up a healthy adult’s poo.
Three Quarters Of Your Poo Is Water
Your faeces is made up of roughly 75% water, although this differs from person to person (and how many classes of hot yoga you go to).
Vegetarians typically have more watery stools, while those who consume less fibre and more protein have dryer ones. This is because fibre has a high ‘water-carrying’ ability, making your stools more bulky, increasing the frequency of your bowel movements and making the process of—to put it delicately—taking a dump easier.
Twenty Five Percent Of Your Poo Is Made Of Solids
According to Vincent Ho, a clinical academic gastroenterologist, “The other 25 per cent of faeces is made up of solids, which are mainly organic (relating to living matter) materials.” He goes on to write that, “A small proportion of solids is made up of inorganic material such as calcium and iron phosphate as well as dried constituents of digestive juices.”
“Around 25-54 per cent of the organic material is made up of microbes (dead and living), such as bacteria and viruses.”
So yes: your poo is teeming with microbes, most of them alive.
Microbes Can Affect Your Poo’s Consistency
Although Vincent’s research was published recently, bacteria in faeces have been extensively studied over a long period of time. For this reason we can say with confidence that there are almost 100 billion bacteria per gram of wet stool.
One study that looked at a range of stools in oxygen-free conditions (oxygen can damage certain types of bacteria) found almost 50 per cent of the bacteria were alive.
And if you’re prone to the odd bout of haemorrhoids, listen to this: the different types of bacteria in your faeces can influence how hard or loose your poo is. For example, “Prevotella bacteria, which can be found in the mouth, vagina and gut, are more commonly seen in those with soft stools… (and) a high-fibre diet is strongly associated with these bacteria,” (ABC News).
On the other hand: bacteria that break down complex carbohydrates prefer harder stools.
Viruses Can Also Be Found In It
Although viruses haven’t been studied as much as bacteria, the report estimates that there are “100 million to 1 billion” viruses per gram of wet faeces in most of us.
It also points out that, “This number can change considerably when people become sick with viral gastroenteritis, such as in norovirus infections, where levels of more than a trillion viruses per gram of stool can be found.”
If You Fart A Lot, You Might Have Slow Intestines
Vincent also explained that, “Methane-producing archaea like Methanobrevibacter are associated with harder stools and constipation as methane can slow down intestinal movement.”
Your Poo Also Contains ‘Other’ Organic Material
This organic material includes carbohydrates and other undigested plant matter, protein and undigested fats. Although faeces does not contain large quantities of carbohydrates (as the majority of what we eat is absorbed) a small undigested amount remains as dietary fibre.
“Some 2-25 per cent of organic matter in faeces is due to nitrogen-containing substances such as undigested dietary protein, and protein from bacteria and cells lining the colon that have been shed,” (Vincent Ho).
Your Poo Also Contains Fat
It might surprise you to know that fats contribute between 2 and 15 per cent of the organic material in our faeces.
“Even with no fat intake… we (still) get some excretion of fat into our faeces,” (Vincent Ho).
This ‘poo fat’ can come from bacteria in the form of short-chain fatty acids created by food fermentation, as well as what isn’t processed of the fat you actually eat.
Your Poo Might Contain Plastic
A recent study found up to nine different types of microscopic plastic particles in the faeces of volunteers who drank bottled water and ate plastic wrapped sandwiches.
But until larger studies have been conducted it is hard to say whether this is a cause for alarm.
Your Poo Can Help Indicate Disease
“Diseases such as inflammatory bowel disease,” Vincent wrote, “Can lead to changes in the type of bacteria in our gut and result in raised inflammatory proteins that can be detected in our stool.”
Also.
“The presence of blood in the stool could signal bowel cancer, though this isn’t always the case. Fortunately there is a good screening test that can pick up the presence of trace blood in the stools and lead to further investigations such as a colonoscopy.”

Case in point: this sweet Thom Browne signature suit in grey.There was one thing the Fantastic Beasts actor seemed to have forgotten though…dun,dun,dun – how to tie a tie.Redmayne rocked up to the Fantastic Beasts: The Crimes of Grindelwald premiere in Beijing recently in a dapper three-piece suit paired to a charcoal cardigan with the label’s signature tri-colour piping. The look was polished off with a classic Presidential fold pocket square, specs hanging off the pocket, a monochrome tie and black brogues to go with the cropped trousers.A winner in the wardrobe? No doubt. But we still can’t get over what’s going on with the tie. Given that other men like Lionel Messi and a host of NBA stars have also rocked the Thom Browne suit in the same ‘school boy tie’ manner, it’s likely to just be the label’s signature look to show off the aforementioned tri-colours in a classy yet edgier way. Regardless, our opinion is that it just looks a bit sloppy.
